Mood board

Last week there was a winter holiday in schools here in Oslo, and Mari spent the week with her family in the mountains. Days were filled with skiing, hanging out with family and friends, cooking, sitting in front of the fireplace, reading, doing yoga and relaxing. The mountains have always had both a calming and energising effect on Mari, it is her natural habitat and the landscape that makes her feel most at home, most alive and most connected. In the mountains, she feels that she can breathe so freely. This inspired her to create a winter mood board where she has collected a few of her favourite winter things, including her somewhat famous “mountain waffles” recipe.

Melt 200 g of butter and set aside. Whisk together 2 eggs and 1 dl sugar (I use organic cane sugar or a mixture of this and coco flower sugar, but use the type of sweetener you prefer). If general, I always use organic ingredients when possible as if both feels and tastes better.

In a separate bowl, mix 350 g of flour (I like to use spelt or some other kind of ancient grain often mixed with oat flour, but plain wheat flour works well too), 1 tsp of baking powder, ½ tsp of baking soda, ¼ tsp of pure vanilla powder or 1 tsp of vanilla sugar, 1 tsp of whole cardamom seeds that I grind (if you don’t have whole cardamom seeds you can use cardamom powder. The waffles will still taste great, although, in my opinion, the freshly grounded cardamom really is the icing on the cake).

Combine the flour mixture into the eggs alternately with 4 dl of buttermilk/full fat cream. Let the batter rest for at least 10 minutes and bake the waffles in a waffle iron lightly greased with butter on the first round.

Enjoy the waffles in the traditional Norwegian way - with sour cream and jam or butter and brown cheese, or in the traditional Swedish way - with whipped cream and jam, or any way you like.
